Toasted Cheese with Volcanic Flavors:

We recently sent Anya a box containing the exquisite @MonteVeronese d’Allevo cheese and a bottle of @SoaveWine, and the result was extraordinary: toasted bread with soft butter, melted cheese, fresh figs, and rosemary, perfectly paired with the minerality of an excellent glass of Recioto di Soave.
Anya herself describes the final result with enthusiasm:
“For one of my favorite dishes, Toasted Cheese (who can’t consider it a favorite dish?), I recently used the Monte Veronese DOP cheese from the hills north of Verona, in northern Italy, covered with sweet figs and cooked in rosemary butter. The soft and creamy cheese, with a mild and slightly spicy taste, is perfect for this creation. If only it were possible to share the aroma of this wonderful combination on Instagram, not to mention the taste. This little meal has been transformed into a true culinary feast, paired with a glass of Soave DOC from the Consorzio Tutela Vini Soave – Recioto di Soave, located east of Verona.
Toasted Cheese is best when spreading butter on both slices of bread, frying the buttered side in a pan with a bit of rosemary, covering it with cheese, and when the cheese is slightly melted, adding figs. Then fold both slices of bread together and enjoy. Of course, don’t forget the wine pairing!”
