A delectable symphony of tastes that will leave your taste buds dancing. Paired with a glass of Lessini Durello DOP , this Saffron, Sausage, and Cheese Risotto is destined to become your go-to comfort food this season. Ingredients:
  • Carnaroli rice: 350 gr
  • Sausage: 300 gr
  • Onion: 1
  • Vegetable broth: 1 liter
  • Saffron: 1 sachet
  • Monteveronese DOP cheese: 100 gr
  • Butter: 50 gr
  • Olive oil: as required
  • White wine: for cooking, 1 glass
  • Salt: as needed
Instructions:
  1. Prepare the Base:
    • Finely chop the onion and sauté it with a drizzle of olive oil in a large pan over medium heat.
  2. Infuse with Sausage Flavor:
    • Add the ground sausage to the sautéed onion, mix well, and allow it to cook for a few minutes until the flavors meld together.
  3. Toast the Rice:
    • Pour in the Carnaroli rice and toast it for a few minutes, allowing each grain to absorb the savory essence of the sausage and onion.
  4. Saffron Elevation:
    • Dissolve the saffron sachet in a bit of vegetable broth. Gradually pour the broth with saffron into the rice, ensuring to add more each time the liquid reduces. Cook over high heat for 15-20 minutes, stirring occasionally.
  5. Cheesy Decadence:
    • Grate the Monteveronese DOP cheese and cut a portion into enticing flakes. Once the risotto is cooked to perfection, add salt, butter, and the grated cheese. Stir well to create a creamy, indulgent texture.
  6. Serve and Enjoy:
    • Plate the risotto, topping it with the delicate cheese flakes. The flavors are heightened when paired with a glass of Lessini Durello DOP, known for its bubbly perfection that complements rich and tasty dishes.
